Wild yeast is used by traditional bakers and is the original method of baking bread. When combined with the fermentation process, it allows the bread to grow and loosen, and uses lactic bacteria to eliminate any carcinogenic compounds from bread.
Sourdough bread is our biggest ally when it comes to preserving our digestive system. Within sourdough you'll find lactic acid bacteria which is extremely human friendly and will improve the bacterial flora in your gastrointestinal tract.
